I found a great post by Iloveari on a protection spec leveling guide that focus on survival. Which means you can take on multiple mobs with little health taken and mana used. The read is quite interesting.

Here is a list of various paladin builds that may suit your playstyle.
The Retnoob (41 ret / 10 holy)
This is the best choice for leveling and PVP. Some may argue AOE Protection is best choice for leveling.
The Healadin (44 holy / 7 prot)
This is the single most durable combat healer in the game
The Holydin (40 holy / 10 ret)
This build gives you all the tools of a powerful healer but you need +Spell Damage gear to make this build work.
PvP Protection (10 Holy / 41 Pprot)
With this spec, it may as well pop up “immune” over your head when a rogue, feral druid, or warrior attacks you.
The Tankadin (33 prot / 11 holy, 7 ret)
With this spec, you can take on multiple mobs at once (up to 4-5 mob no more than 2-3 levels higher). However, you will need an up-to-date weapon and shield; preferably a blue weapon/shield of your choice. Please keep in mind this build covers up to level 43.

Blood Knight Normal Mount
The Paladin trainer provides the ability to summon a mount at level 40. The price of the talent includes the training.
Blood Knight Epic Mount steps:
1)Talk to the Silvermoon Paladin trainer which gives you a quest to talk to a blood knight downstairs in the paladin area. She wants you to bring her: x40 Rune Cloth , x10 Sungrass , x6 Arcanite Bar , x5 Dark Runes , and 150 gold
2)When this is complete she requests that you kill 15 Scourge Siege Engineers and 3 Meat Wagons. These are located in the north of EPL near the entrance to Ghostlands.
3)Once this is turned in the quest giver asks you to loot a vial of Holy Water from the library wing of the Abby in Tyr’s Hand (it’s a little dish on a table) and return to her.
4) She then asks you to purchase a Crepuscular Powder (150g) from the poison vendor and an Arcane catalyst (vendor 45g) item from the reagent vendor, both of which are located in Silvermoon and bring them back to her. In addition to that, a Pristine Black Diamond and a Azerothian Diamond are also required as part of the step.
5) Finally you are given the task of extinguishing the Eternal Flame in the chapel in Stratholme (the church just inside the back door entrance, you only have to kill 2-3 pulls, the Eternal Flame is on the table). When you do this the Paladin quest giver (the medallion quest) who is normally in the chapel attacks you and is easily defeated. Next 6 paladins ride up and you have to fight them. They were extremely easy (our group didn’t even heal) and once defeated the quest is complete and you can turn it in for both the epic mount ability (includes the training) and the Silvermoon tabard!
If you’re fighting with a 1-hander and shield, attach spikes to your shield. You’ll benefit from the additional damage when you block especially with holy shield and redoubt.
BeneCast — is a tool to help the player cast beneficial spells on themselves, their party members, and friendly targets. It does so by allowing the player to pick and choose what spells they want to show up as clickable buttons from the BeneCast interface.
